Chicken and Chilies Casserole


OK, so it's probably not the most healthy recipe I have posted on my blog. But it is delicious and super easy to prepare ahead of time. I originally found the recipe on Allrecipes.com, but because I never read through recipes properly and I always have to change things it became more of an inspiration recipe for me. Chicken and Chilies Casserole

1/2 cup sour cream
1/2 cup cream cheese
2 tbsp dry onion flakes
2 tsp garlic powder
1 tbsp cumin
1/2-1 can Rotel (diced tomatoes and chilies) OR 1 4 oz can diced chilies
1 teaspoon salt
1/2 teaspoon pepper
1/2 (2 pound) package frozen southern style hash brown potatoes
1 1/2 cups cubed cooked chicken
1 cup shredded Cheddar cheese, divided
1/2 cup tortilla chips, crushed


In a large bowl, combine sour cream, cream cheese, onion flakes, garlic powder, cumin, Rotel, salt and pepper. Stir in potatoes, chicken and 1/2 of the cheese. Place in a casserole dish and top with tortilla chips and remaining cheese. Bake, uncovered, at 375 degrees for 45 minutes or until golden brown. Can be prepared a day ahead.
