this was amazing! i put a ton of cheese on top. we had it for leftovers for lunch and dinner the next night. uses some pans but for sure the best enchiladas from scratch!!! make 'em for dinner tonight!
I made these for me and DH Saturday night. I followed the recipe exact. These were absolutely delicious! I made the black beans to go with it. Definently one I will make again. Thank you!!

I LOVE enchiladas and these don't sound any harder than any other I've made--and yours with homemade sauce! I think I'm going to try it with shredded beef tomorrow!
Just a tip: heat corn tortillas quickly in an oiled skillet on both sides and remove with tongs before dipping in the sauce. It will make them pliable and easy to roll.
Went to the supermarket and bought all the ingredients today. Can't wait for dinner tonight! Looks delicious, I'm putting long grain rice and red beans as a side dish :) Never made enchiladas before, thanks for the simple recipe!
