BBQ Pork Chops


Tonight I made BBQ pork chops and Yukon gold garlic smashed potatoes.


The pork chops turned out okay. I seasoned them with a little garlic powder, salt and pepper. Then I wrapped them in a foil 'packet' covered in Montgomery Inn BBQ sauce. I baked at 325 for about an hour. I feel like they were a little tough. I think next time I would let them marinate overnight and try cooking for a little less time. Jesse seemed to really enjoy them, though. I would definitely make them again.


For the potatoes I boiled Yukon gold potatoes (cut into quarters) in water with a minced clove of garlic. I left the skins on then used my hand mixer to "smash" them. I added milk, sour cream, a little chicken broth, some butter, salt and pepper, and garlic powder. These turned out great. Every once in a while I like a nice lumpy, skin on, mashed potato.

Getting Started

I was married on October 14th, 2005. It was about 8 months into our marriage when I realized how much I loved to cook. At first I made pretty much the same 5 things over and over again. Now I am always looking for a new recipe to try. I created this blog to keep track of all of my food adventures. Now I can have a record of what I made, what I changed, and how we liked it.
